Cheesy Zucchini Bake

I know, I know, I’ve not had many food posts lately. Whenever it gets warmer out, my Hubby and I just don’t feel like cooking. We usually grill a lot and it’s just simple things like meat, veggies and salads. This post is more of the same but wanted to share the easy Cheesy Zucchini side dish I made that we both loved!

The Hubby brought home a zucchini that came from a co-workers garden. I loved grilled veggies but they can be boring and not very filling. So I got a little creative and here’s what I whipped up. Basically a cheesy zucchini bake and I actually just put in the toaster oven so I didn’t have to heat up the house.

I’ve also made this in a cast iron skillet on the grill. Everything’s better with cheese, right?

Ingredients: 
1 medium-large zucchini chopped
chopped onion & green pepper
Parmesan cheese
mozzarella cheese
pepper
garlic salt
red pepper flakes
fat free sour cream
low fat mayo

Directions:
I just eyeballed all the ingredients and mixed in a bowl. Sprayed an oven safe casserole dish and poured it in. I baked it at 400 degrees for about 20-30 minutes. Put some extra cheese on top and broiled it til bubbly.

We had a small salad while this was baking and grilled some mahi that we marinated with bourbon peppercorn marinade.

    I just tried your recipe, and it sure looks good. I'll let you know how it tastes. I used green onions instead of regular onion and added a little bit of lemon pepper. I topped it with cheddar/mozzarella blend cheese. Yum!
