I try to make these Easy Stuffed Peppers a little healthier by using ground turkey and brown rice. Of course you can substitute for ground beef and white rice if you’d like. I think the marinara sauce is what really makes these good!
Ingredients
3-4 peppers (makes 3 overstuffed peppers or 4 regular) *I usually use 3 large orange or yellow peppers (I don’t like green)
1 lb ground turkey
1/2 small onion, chopped fine
10-15 crushed Ritz crackers
3/4 tsp salt
1/2 tsp pepper
1 cup cooked brown rice
1/4 cup water (eyeball it)
1/2 jar marinara sauce (if you like more sauce, add more)
1 small clove minced garlic
Directions
Preheat oven to 350 degrees
Cut peppers in halves lengthwise, remove seeds and core. Mix raw turkey, onion, crackers, salt, pepper, cooked rice, garlic and a little of the sauce. I eyeball the amount of sauce but probably 1/4 – 1/2 cup. Add the water (as much as needed) and stir until combined. Mixture should be moist.
Fill pepper halves with mixture. Place in sprayed casserole dish. Pour remaining sauce over and bake covered with foil for 1 hour. Uncover and bake an additional 15 minutes or until cooked through. Sprinkle with parmesan cheese if you’d like before serving or shredded mozzarella cheese after removing foil.
